CHEESY TOMATO PINWHEELS

This is perfect recipe when you need to throw something together to feed a crowd. Simple ingredients that you already have in your pantry, easy to assemble and can be made way ahead of time. Just wrap it up and bake when you need it. You can play around with extra ingredients if you like to use up any leftovers you have kicking around in the fridge.

Here's what you'll need

  • 1 package rolled out puff pastry
  • ¼ cup tomato paste
  • ¼ cup cream cheese
  • ½ cup grated mozzarella
  • 2 anchovy fillet (mashed into a paste)
  • ¼ kalamata cup olives (pitted and chopped)
  • 1 egg (beaten with a splash of milk for an egg wash)
  • ½ lemon (juiced and zested)
  • salt and pepper to taste
  1. unroll the puff pastry

  2. mix the olives, anchovy, tomato paste with lemon juice and zest in a bowl and season well with salt and pepper

  3. with a knife or spatula, spread the cream cheese on the pastry, followed by the tomato paste mixture to cover the entire surface evenly

  4. next, roll the whole thing up like a swiss rolland cut into 2 inch slices

  5. place the slices onto a baking tray, allowing enough room between them because they will spread out

  6. brush with eggwash, and bake in a preheated 350° oven for 15 minutes or so, or until puffed up and golden brown
