Shredded Duck Wontons with Tomato Prune Dipping Sauce

SHREDDED DUCK WONTONS WITH TOMATO PRUNE DIPPING SAUCE

If you have never had deep fried wontons, you are missing out! This method (shown step by step in photos) gives you lovely plump filled bite and a satisfying crispy end that doubles as a handy little handle! If you're throwing a cocktail party, these are perfect as they can be made ahead and heated at the last minute.

Here's what you'll need

  • 1 small whole duck
  • 1 cup beef stock
  • 2 tbsp red wine
  • 1 medium onion (chopped and divided)
  • 3 cloves garlic (minced and divided)
  • 1 small carrot (finely cubes as small as you can)
  • ¼ tsp nutmeg
  • ¼ cup cream cheese
  • 1 green onion (fine slice)
  • 24 wonton sheets
  • 1 egg (whisked with a dash of water)
  • ¼ cup prunes (chopped and soaking in enough boiling water to cover)
  • ½ cup ketchup
  • ¼ cup brown sugar
  • salt & pepper to taste
Here's how:
  1. season the duck with salt and pepper and toss onto a grill over a deep dish oven proof pan (lasagna dish works, just to keep all the fat from triggering all the smoke alarms in your building)

  2. bake in a preheated 350° oven for about an hour or until cooked through, then allow it to rest until almost room temperature, shred the duck and set aside

  3. in the meantime, sautee half the onions and garlic and all the carrot in a bit of olive oil until translucent and soft, about 5 minutes

  4. add the duck, beef stock, nutmeg and red wine, cover and simmer on low heat for an hour or so taking the lid off halfway through and keep simmering until the liquid is gone

  5. set aside until completely cool, then add the cream cheese and green onions, taste and adjust seasoning as you like and pop into the fridge to set

  6. now, for the sauce: sautee the rest of the onions and garlic until cooked, about 5 minutes, add the ketchup, brown sugar and prunes (drained) and simmer 2 or 3 minutes to dissolve the sugar

  7. give it a quick blitz with a hand blender (or whatever you have handy) and set aside to cool completely

  8. now moving quite quickly, following these steps and assemble all the wontons

  10. keep assembling until you're out of wontons or filling...whichever comes first

  12. pop them into a preheated (350°) deep fryer and cook until crispy and bubbly

  13. spoon them out onto a paper towel and keep warm in a just heated oven until they're all cooked

  14. serve them up hot with the sauce
