If you are a lover of all things bacon, this is the best thing you will ever pop into your mouth...guaranteed! If you don't fancy spicy, don't worry at all. The cream filling smooths it all out, so you get a bit of heat and salty, of course, from the bacon.I'm dabbling with a Kato diet and this is GREAT!!

Here's what you'll need

  • 12 jalpenos (good sized, not too small)
  • ¼ cup goat cheese
  • ¼ cup cream cheese
  • 2 cloves garlic (minced)
  • 1 generous handful of cilantro
  • 1 lemon (juiced and zested)
  • 1 tbsp ground cumin
  • 24 strips streaky bacon
  • salt and pepper

Here's how

  1. cut the jalapenos in half (lengthwise), scoop out the seeds and pith (HINT: if you like spicy, keep the pith and seeds and add them to the cheese mixture)

  3. in a bowl, mix the garlic, cheeses, cilantro, cumin and lemon juice and zest

  5. dollop a spoonful of the cheese mixture into the jalapeno, leveling it off smoothly

  7. wrap a piece of bacon around each jalapeno half...not too tight as the bacon will shrink and squeeze slightly

  9. pop into a preheated 350° oven for 30 minutes or until the bacon is crisp
