ROASTED TOMATO, ONION AND GARLIC PIZZA POPS

Pizza pops are something everyone loves! Kids and grownups. I wanted to make these a bit different, so I roasted all the ingredients and the flavour turned out amazing. Roasting the vegetables made them sweet but with a nice depth of flavour. I kept these simple, but you could add any of your favourite pizza topping. You could also cook them in the oven if you like.

Here's what you'll need

  • 4 medium tomatoes
  • 1 medium onion
  • 1 whole head of garlic
  • ½ cup grated mozzarella
  • 1 batch of pizza dough
  • salt and pepper
  1. peel and cut the onion into quarters leaving the root attached

  2. cut the tomato into 1 inch slices

  3. season with salt, pepper and pinch of sugar and toss in olive oil

  5. wrap the whole head of garlic in a bit of foil

  6. place the onion quarters, tomato slices and garlic onto a baking sheet and bake in a preheated °300 oven for about 20 minutes or until they're soft and starting to caramelize

  8. cut the root off the onion and chop them and squeeze out the garlic cloves and mash them with the side of a knife or spoon

  9. chop up the tomato to almost a paste, and mix with the onion, garlic and cheese

  11. rip off pieces of dough (about the size of a golf ball) and flaten with your hand

  12. scoop out a bit of the filling onto the centre of the dough

  14. carefully fold the dough over the filling and roll in your hand to make a smooth ball and carefully flatten

  16. once you're all done, you're ready to fry

  17. carefully pop them into a deep fryer until they're golden brown and cooked through (about 5 minutes)

  19. when they're done, toss them in warm butter and parmesan

  21. serve with a tangy tomato sauce if you like
