SWEET & SPICY CRISPY BEEF

If you make this, you will be a superstar! Trust me, these are ridiculously addictive and yummy. Perfectly sweet, spicy, salty, cripy and chewy...what more is there to a perfect snack and better than any take-away!

Here's what you'll need

SWEET & SPICY CRISPY BEEF
  • 1 pound steak (good quality and tender is best)
  • ¼ cup rice flour
  • 1 tbsp schezwan peppercorns
  • ½ cup sugar
  • ½ cup rice wine
  • 2 tbsp rice wine vinegar
  • 3 red chillies (thin sliced)
  • 2 tbsp grated fresh ginger
  • 5 cloves garlic (minced)
  • 1 tsp chilli flakes
  • 2 lemongrass stalks
  • 5 lime leaves
  • salt and pepper

Here's how

  1. slice steak as thin as possible

  2. bash peppercorns in a pestle and mortar

  3. dredge in seasoned rice flour and peppercorns...let rest for at least 15 minutes



  4. meanwhile, heat up some vegetable oil (in a deep fryer or a pot on the stove)

  5. when it's ready, start to deep fry the beef strips until they're golden brown (a few minutes)and set aside



  6. sautee finely sliced lemongrass (be sure to get rid of the outer layers), finely minced garlic, ginger and chillies, and chilli flakes



  7. add rice wine, sugar and rice wine vinegar

  8. simmer until thick and syrupy...about 8 ~ 10 minutes

  9. toss the beef strips in and give it a toss

  10. once it's all coated and sticky, you're ready
