You need to eat



This is some serious beef on beef action and packed with powerful umami flavour! It'll make any meat eater ecstatic to eat and reaching for napkins, as any good burger should. All the flavours of French Onion Soup with Gryere melted all over and a nice cripsed bun...the French won't know what hit 'em...serve up with some nice frites and that should keep the peace : )

Here's what you'll need

  • 1 pound ground beef
  • 4 burger buns
  • 1 package of greens (lightly dressed in lemon and olive oil)
  • 3 or 4 medium onions
  • 2 garlic cloves (chopped)
  • 1 cups white wine
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp flour
  • 1 cup beef stock
  • 1 tsp sugar
  • 1 cup grated Gryere (more or less as you like it)
  • 2 sprigs of fresh rosemary (or 1 tbsp dried)
  • salt & pepper to taste

Here's how

  1. slice the onions really thin

  2. sautee them with the garlic in the butter and olive on medium-low heat, oil until they're a nice deep colour (at least an hour)

  3. then sprinkle in the flour and cook about 5 minutes

  4. then add in all the liquids, the sugar and the whole rosemary sprigs (keep some of the tops of the sprigs to toss onto the flatbread before it hits the oven

  5. simmer until most of the liquid is gone...about an hour or so

  6. meanwhile, divide the ground beef into four balls and flatten until a bit wider than your burger buns (I find doing this between sheets of waxed paper is perfect)

  7. season really well on both sides and fry them up in a frying pan over medium heat (or grill them if you like) until cooked through and once cooked, set them on a baking sheet

  8. put generous amounts of the onion mixture on the burgers and add generous amounts of the gryere

  9. place under the broiler for a few minutes (until the cheese is melty and browning...this is key, it must brown)

  10. spread mayo on the inside of your bunsand toast well in the oven

  11. serve them up with loads of napkins
