ITALIAN ROAST BEEF

ITALIAN ROAST BEEF WITH TOMATO SAUCE, MASHED POTATOES AND CREAMED SPINACH

For me, beef, tomato sauce and mashed potatoes is the ultimate comfort food. This is a cold winter day dish...it takes all day to make, fills the house with delicious smells that is unmistakably beefy, and will satisfy any appetite. I tossed this one in the oven, but you could easily use your slow cooker.

Here's what you'll need

  • 3 pound roasting beef (any size and cut you can get)
  • 6 medium tomatoes (roughly diced) or 1 large can of diced tomatoes
  • 1 small yellow bell pepper
  • 1 small red bell pepper
  • 1 medium onion
  • 1 cup beef stock
  • ½ cup red wine
  • ½ cup tomato paste
  • 1 whole head garlic (finely chopped)
  • 3 tbsp olive oil
  • 2 cups spinach (frozen or fresh)
  • ½ cup cream
  • 2 cups mashed potatoes
  • salt and pepper

Here's how

  1. take your roast out of the fridge at least an hour before you start

  2. season the beef really well on all sides

  3. in a sautee pan, brown well on all sides and even the ends

  5. pop it into an oven dish and surround the meat with tomatoes, peppers, onion and garlic

  7. pour in the red wine, tomato paste and beef stock

  8. cover well and pop into an °225 oven for 6 hours

  9. you know it's ready when the meat falls apart really easily

  10. ladle out most of the sauce into a small pot and reduce over medium high heat until it's half gone and the sauce thickens

  11. in the meantime, sautee spinach with diced onions and garlic

  12. add the cream, season well and simmer gently on low heat

  13. when you're ready to plate, slice the roast quite thick

  14. smear the creamed spinach on a warm plate, top with mashed potatoes, then beef and smother everything with the tomato sauce

  15. grate on some fresh parm if you like
