You need to eat



If you've ever had true BBQ brisket, you'll know how addictive it is, really craveable flavours. The problem is making this at home can be impossible unless you have a smoker, but I find you can sort of replicate it if you use the proper seasonings. I know this is not " authentic" BBQ, but that is not my intention, I'm only trying to satisfy a craving...enjoy!

Here's what you'll need

  • 2 pound beef brisket (take out of the fridge a couple of hours before to allow it to come to room temp)
  • 2 tbsp dried mustard
  • 2 tbsp ground cumin
  • 2 tbsp ground coriander
  • 2 tbsp smoked paprika
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • ¼ cup brown sugar
  • 2 tbsp molasses (or black treacle)
  • salt and pepper

Here's how

  1. in a bowl, mix all the ingredients really well (minus the beef)

  2. season the beef really well with salt and pepper and rub the beef with the spice mixture and allow to sit another hour at room temperature

  3. place the beef on a roasting tray and toss into a preheated 425° oven for 30 minutes

  4. remove the beef, wrap well in foil a few times around the beef

  5. toss back onto the roasting tray and back into the oven...turn down the heat to 225°

  6. bake for 3 hours
  7. now, upwrap it, crank up the heat back to 425° and bake another half an hour
  8. take it out of the oven and allow to rest for half an hour at least

  9. unwrap, slice it up and serve up with your favourite sides or on a bun with some zingy slaw
