ROAST BEEF WITH HONEY GLAZED CARROTS

I'd never made medium roast beef before, I was always a low and slow cooked kinda gal. Well, not this time! I might have been a bit intimidated at the start, but was determined to give it a go! It really worked! You just need to follow a few simple rules, season it really well with salt and pepper on all sides, cook it undisturbed and let it rest!

Here's what you'll need

  • 2 pound beef at room temperature (any large roasting joint)
  • ¼ cup mustard (any kind you like or have on hand)
  • 2 tbsp olive oil
  • ½ pound carrots (scrubbed clean or peeled if you like)
  • ¼ cup honey
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 1 tsp cumin
  • salt and pepper

Here's how

  1. pull the beef out of the fridge at least an hour before you're going to cook it and preheat a 350° oven

  2. season the beef with salt and pepper on all sides and toss into a roasting pan

  3. in bowl, mix the mustard and olive oil together and slater all over the beef

  5. cook in the centre of the oven until cooked (see chart below)

  6.   Roasting Times
    Rare 20 min per 450g (1lb) + 20 min
    Medium 25 min per 450g (1lb) + 25 min
    Well done 30 min per 450g (1lb) + 30 min


  7. when it's ready, pop it onto a warmed plate and loosely wrap it in foil for at least 10 minutes before slicing

  9. now the carrots, boil them in plenty of salted water until just fork tender (about 10 minutes depending how big they are)

  10. drain them and rinse well under the cold water tap to cool them completely and stop them cooking

  11. pat them dry with paper towel

  12. in a bowl, whisk together the honey, olive oil, cumin and lemon juice

  13. toss in the carrots to coat them completely, season and lay out in a single layer on a baking sheet

  14. toss into a preheated 375° oven, bake for 15 minutes or until caramelized

  18. gently heat the roasting pan, add a dash of red wine and stir to get all the bits from the bottom of the pan, simmer until reduced and slighlty thickening

  19. toss in a good nub of butter and simmer until it just melts and the sauce is nice and shiny and pour over the beef
