You need to eat



Nothing says weekend like a big pile of pancakes! They are the quitessential morning treat and if someone cooks you pancakes, you need to keep them. I just love the sweet, soft dough with a generous amount of butter and syrup. There are healthy breakfasts out there, but this is not the time for that. This is indulgent, have a nap after kind of breakfast. I recommend crispy bacon to go dip in the syrup, of course.

Here's what you'll need

  • 1½ cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 cup milk
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1¼ cups milk
  • 1 egg
  • 3 tablespoons butter, melted
  1. in a bowl, mix the dry ingredients, the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth

  2. make a well in the middle, pour in the milk, egg and melted butter and whisk up until it's a smooth batter


  4. preheat an oiled griddle or frying pan over medium high heat and pour the batter onto the griddle (using about ¼ cup for each pancake


  6. cook on one side for 3 or 4 minutes, flip and cook another minute

  7. place them onto a baking tray to keep warm in the oven and repeat until you have no batter left and a big pile of pancakes
