PROSCIUTTO WRAPPED CHEESE STUFFED BAKED FIGS
Figs are simply delish! They lend themselves to sweet and savoury dishes, dessert, starter or main, and everything in between. You can use any kind of creamy type cheese you have on hand, and you can even make these well ahead. Once you've baked them off, drizzle the whole thing with a nice balsamic glaze and honey and you're done!
As a lover of cheese, I absolutely love this dip! Smooth, creamy with a salty and briny, tangy hit of feta is a perfect marriage of flavour. Serve it up with wings and you've got a hit!
Ricotta is made fresh, so this is ideal to make at home. It takes less than 5 minutes and needs only 2 ingredients. The best part of making your own, other than bragging rights of course, is that you can flavour it any way you like...imagine it? Citrus, herbs, spices, you are only limited by your imagination. You will also need a fine sieve lined with either cheesecloth, muslin or even a coffee filter over a bowl.
HOT & CHEESY CUBAN PORK DIP
We recently made these amazing Cuban pork sandwiches and had loads of pork leftover, so I thought I'd toss into a nice hot dip infused with all those Cuban flavours. It really worked and was ridiculously addictive! Give it a go!
FIG & BRIE STUFFED PASTRY
Imagine a cheese board baked inside flaky puff pastry...that is exactly what this is. Fruit and cheese are a perfect match and I love how oozy and gooey brie gets when baked. Serve this up with a lightly dressed green salad for a light lunch or starter, or make them smaller for an easy make-ahead appetizer for any occasion.
DEEP FRIED HALLOUMI WITH SPICY HONEY SAMBAL SAUCE
Halloomi has to be one of my favourite cheeses to use. It stands up to heat and while a not as flavourful as other cheese, it really lends well to taking on whatever flavours you toss with it. I love cheese sticks and these work really well because you won't lose half the cheese to the deep fryer. Serve them along with this sweet and spicy sauce and a wedge of lemon.
TWICE COOKED GRILLED CHEESE FINGERS WITH MOROCCAN TOMATO DIPPING SAUCE
It is sometimes unavoidable to have some bread go a bit stale. This recipe is perfect for just such times. Twice cooking these makes them cripy and delicious. A new way to have grilled cheese with a twist on tomato soup. Kids and grownups alike will love them. Comfort food at it's best!
DEEP FRIED MAC AND CHEESE
Mac 'n' cheese is a favourite wherever you go. I recently made a batch and as usual, I made way too much. Beer battering and deep frying seemed the perfect solution. The perfect thing when hanging out in the kitchen and having a few too many cocktails. Dip these crispy, gooey bundles in a spicy sauce and you are in heaven. Guilty pleasure? Yes!
FRIED HALLOUMI WITH OLIVE TAPENADE
I came across halloumi a few years ago and fell in love with it. A cheese that holds up when you fry it, or even on the grill. How good is that?! It has a really nice firm texture and an unmistakable squeak as you eat it. Halloumi is quite mild and lends itself well to the briny tapenade. Simplicity...
GNUDI WITH SPICY TOMATO SAUCE
Gnudi seems complicated and only an expert cook can hope to achieve, but nothing can be further from the truth. They need a bit of time in the fridge to set up so make them in the morning and they'll be ready to go for dinner. These lovely soft pillows of cheesy goodness aren't difficult, although maybe a bit labour intensive. Keep the sauce simple so you can really taste the gnudi. Give it a go!
