Hot & Cheesy Cuban Pork Dip

HOT & CHEESY CUBAN PORK DIP

We recently made these amazing Cuban pork sandwiches and had loads of pork leftover, so I thought I'd toss into a nice hot dip infused with all those Cuban flavours. It really worked and was ridiculously addictive! Give it a go!

Here's what you'll need

  • 1 package cream cheese
  • 1 cup Cuban pulled pork (click here for the recipe
  • 1 lime (juiced and zested)
  • ¼ cup frozen or fresh corn
  • ¼ cup mayo
  • ¼ cup sour cream
  • 2 tbsp mustard
  • 1½ cup grated swiss cheese (seperated)
  • salt and pepper
  1. in a bowl mix all the ingredients together until smooth and creamy (using a cup of the grated swiss cheese)

  2. pour into an oven-proof dish

  4. top with the rest of the grated cheese

  6. bake in a 350° oven for 15 to 30 minutes depending on the depth and size of your baking dish, it should be bubbly and golden brown on top

  8. let it rest 5 to 10 minutes before you dig in...this will be like molten lava, so be careful!

  9. serve up with tortillas, pita chips, crostinis, crackers...whatever you like or have
