DEEP FRIED HALLOUMI WITH SPICY HONEY SAMBAL SAUCE

Halloomi has to be one of my favourite cheeses to use. It stands up to heat and while a not as flavourful as other cheese, it really lends well to taking on whatever flavours you toss with it. I love cheese sticks and these work really well because you won't lose half the cheese to the deep fryer. Serve them along with this sweet and spicy sauce and a wedge of lemon.

Here's what you'll need

  • 1 package halloumi (250g)
  • ¼ flour
  • 1 egg (whisked with a dash of water)
  • ½ cup bread crumbs
  • ¼ cup honey
  • 3 tbsp sambal oleek (more or less depending how spicy you want it...just taste and adjust)
  • 1 tbsp lemon juices and zest
  • salt and pepper
  1. cut the halloomi into bite sized chunks

  2. in three bowls, whisk the egg in one, add the bread crumbs in another and add the flour in the third

  3. dredge the cheese in the flour, then the egg, then the bread crumbs

  4. I usually like to let them set up in the fridge for half an hour or so

  5. pop them into a preaheated deep fryer until golden and crisp (not too many at a time, you don't want to overcrowd them)

  6. meanwhile, mix the honey and sambal in a small ramekin

  7. HONEY SAMBAL
  8. that's it...dip and eat
