TWICE COOKED GRILLED CHEESE FINGERS WITH MOROCCAN TOMATO DIPPING SAUCE

It is sometimes unavoidable to have some bread go a bit stale. This recipe is perfect for just such times. Twice cooking these makes them cripy and delicious. A new way to have grilled cheese with a twist on tomato soup. Kids and grownups alike will love them. Comfort food at it's best!

Here's what you'll need

  • 8 slices bread (slightly stale(
  • 3 tbsp butter
  • 3 slices gryere cheese (or anything you have on hand)
  • 6 cloves finely chopped garlic
  • 1 small onion
  • 1 tin chopped tomatoes
  • 3 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper
  • 1 tsp fennel seeds
  • 1 tbsp sugar
  • 1 tbsp lemon juices and zest
  • salt and pepper
  1. in a dry pot, heat the whole spices until smoking and fragrant

  2. bash them in a pestle and mortar until powdery and toss back in the pot with olive oil with the rest of the spices and sugar

  3. add the onions and garlic and cook until browned

  4. add the tomatoes and simmer on medium low heat for about 15 minutes

  5. then blitz the sauce with an immersion blender, food processor or blender until smooth

  6. return to the heat and simmer for another 5 minutes or so

  7. meanwhile make the grilled cheeses by buttering all the bread on one side, place one slice of bread (butter side down) in a frying pan, top wtih cheese and place another slice of bread on top (butter side up)

  8. flip the sandwich when golden brown on the bottom (about 3 or 4 minutes) and cook the other side

  9. when all the grilled cheeses are cooked, set them aside to cool

  10. when completely cooled, cut the crusts off and cut the sandwiches lenghtwise into 4 "fingers"

  11. place them onto a baking sheet and toss into a preheated °350 oven for about 5 minutes

  12. serve them up with the dipping sauce (adding the lemon juice and zest at the last minute)
