ETHIOPIAN BERBERE BBQ WINGS

Berbere, if you're not familiar with it is a spice blend from Ethiopia, much like a spicy curry. I tried this (link here) amazing version I found on Amazon, delivered straight to my door! The flavours lend themselves really well to be turned into BBQ sauce, then grilled of course. Spicy, sweet charred wings are the best thing you will grill all summer and will impress everyone who eats them, guaranteed!

Here's what you'll need

  • 1 pound chicken wings
  • 1 tbsp Ethiopian berbere spice mix (order from this link)
  • 1 cup ketchup
  • ¼ cup brown sugar
  • 1 tbsp red wine vinegar
  • 6 gloves garlic
  • ¼ cup peanuts (chopped)
  • ½ lemon (juiced)
  • 1 handful cilantro (chopped)
  • salt and pepper
  1. toss the wings onto a parchment lined baking tray and toss into a preheated 350° oven until 75% cooked (about 30 minutes)

  2. meanwhile, in a sauce pan, sautee the garlic in butter and olive oil until translucent (about 4 - 5 minutes)

  3. toss in the berbere spice mix and sautee another 4 or 5 minutes

  4. add the ketchup, brown sugar and vinegar and simmer 10 minutes until the sauce is thickened, it's ready at this point, but you can give it a quick blitz with an immersion blender to smoothen it

  5. toss the wings in the sauce and pop back onto the baking sheet and back in the oven for another 15 minutes or until cooked all the way through and caramelized

  6. toss them onto a warmed platter, squeeze on the lemon and garnish the wings with the chopped peanuts and cilantro...serve up!
