Buffalo wings hail from, well, Buffalo in New York. Many people claim to make them and you see them on menus all the time, but very few really know how to make them properly. There is no coating or dredge, they're cooked crispy and tossed with just a few simple ingredients. Serve them up with ice cold beer and some blue cheese dip.

Here's what you'll need

  • 1 pound chicken wings
  • 1 tbsp butter
  • ¼ cup spicy hot sauce (anything you like, but it needs to be hot and vinegary)
  • salt and pepper
  1. toss the wings (in batches) into a preheated deep fryer until cooked (about 6 - 8 minutes)

  2. meanwhile, in a bowl add the butter and hot sauce

  3. when the wings are cooked, toss them into the waiting bowl and give it a good toss to coat really well

  4. serve them up with a nice, creamy blue cheese dip blue cheese dip
