CABBAGE, KALE AND CHICKEN SOUP

There is nothing better for you than a nice warming chicken soup and it makes the house smell really nice. In this version, I've added cabbage and kale to pack a healthier punch of flavours and textures.

Here's what you'll need

CABBAGE, KALE AND CHICKEN SOUP
  • 4 pound whole chicken
  • 3 tbsp olive oil
  • 1 small white cabbage
  • 2 carrots
  • 2 celery stalks
  • 2 medium onions
  • 1 cup white wine
  • 500g bag of kale
  • 1 bunch parsley
  • salt and pepper

Here's how:

  1. season a whole chiken with salt and pepper

  2. bake in a preheated 350° oven for 45 minutes or until cooked all the way through

  4. let the chicken cool enough to touch and seperate the meat from the bones

  5. in a big stock pot, add 1 onion, carrots, celery and parsley with the chicken bones and enough water to cover the whole thing

  6. simmer the stock for an hour...be sure not to stir and skim the "gunk" that floats up to the top

  7. strain the chicken stock

  8. in a pot, sautee chopped onions and diced cabbage until soft and slightly coloured

  10. add the kale and cook a few minutes

  12. pour in the chicken stock, white wine and add the chicken pieces

  13. simmer for 20 minutes and laddle into a bowls
