CHICKEN, MUSHROOM AND BROCCOLINI PIE

As usual, I've got odds and ends in my fridge. With only two of us to cook for and buying a bit in bulk to save a bit of money, more often than not, I'm having to cook what have rather than shopping for specific ingredients I need for an idea I have in mind. This is one of those. The parsnip puree really makes this unique and tasty!

Here's what you'll need

  • 4 cups leftover chicken (or turkey)
  • 1 cup chicken stock
  • 2 cups sliced mushrooms
  • 3 cloves of garlic
  • 1 small onion (finely diced)
  • 1 cup white wine
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 tbsp dried rosemary
  • 1 tbsp dried thyme
  • 1 package broccolini
  • 3 parsnips
  • 2 cup milk
  • 2 cups mashed potatoes
  • salt and pepper
  1. gently sautee the onions and garlic in the butter

  2. when translucent, sprinkle in the flour and cook for about 5 minutes or so

  3. chop or shred the chicken

  5. add the white wine and chicken stock and reduce on medium high heat(about 25 minutes or so)

  6. add the chicken and simmer a few minutes to heat through

  7. meanwhile, gently simmer the peeled and chopped parsips in milk and butter for about 30 minutes or until really soft, almost overcooked (and make sure to season well with salt and pepper)

  9. blitz the parsnips, milk and all in a food processor until smooth

  11. sautee the broccolini in a bit of olive oil, minced garlic with salt and pepper (maybe add a tbsp of water and cover to help it cook a bit)

  13. assembling is simple, in an ovenproof dish, layer chiken, then broccolini, then parsnip puree and then finish with mashed potatoes

  15. bake in a preheated °350 oven for 30-40 minutes or until golden brown on top

  17. allow to rest a few minutes before serving up
