Chicken 'n' Waffles with Spicy Sweet Butter

CHICKEN 'n' WAFFLES WITH SPICY SWEET BUTTER

I bought a waffle iron a while back and was excited to try it out and I knew exactly what I was going to make first...chicken and waffles! And this butter is the best thing to go with it. You get everything! Crunchy chicken, crispy soft waffles, sweet, salty, spicy...ticks all the boxes!! Give this a try! You will not be disappointed, guaranteed!

Here's what you'll need

For the waffles

  • 1 large egg
  • 4 tablespoons melted butter
  • 1 cup milk
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon kosher salt

For the chicken

  • 2 chicken breast (cut into strips or chunks)
  • 4 cups Corn Flakes
  • 2 eggs (whisked)
  • ½ cup flour (more or less)
  • ¼ cup honey
  • 1 tbsp mustard (any kind you like...and maybe more if you like it punchier)
  • salt and pepper to taste

For the butter

  • 4 tablespoons butter
  • ½ cup syrup
  • 2 tbsp brown sugar
  • 3 tbsp sambal oleek (more or less as you like)
  • 1/4 teaspoon kosher salt
  1. season the chicken with salt and pepper

  2. in a pestle and mortar, crush the Corn Flakes, but not to a complete dust, you want some to be a bit bigger to make sure you get the best crunch

  4. dredge the chicken pieces in the flour, then the egg and then in the Corn Flakes

  6. toss into a preheated °350 deep fryer until cooked all the way through, golden and crisp (about 4 or 5 minutes depending how big they are)

  7. season them with salt as soon as they come out and keep warm in a just warm preheated oven until the waffles are ready

  8. now, make the waffles...seperate the egg yolk from the white into two bowls

  9. whisk the egg yolk with the milk and slowly add the melted butter (be careful not to cook the egg)

  10. then add the flour, baking powder, sugar, and salt and whisk together until just combined, and some lumps are fine

  12. beat the egg white into soft peaks and gently fold it into the rest of the mixture and you're ready to go

  14. scoop out a ladle of batter into a preheated waffle iron and cook as your waffle iron directs (mine was about 5 minutes)

  16. in the meantime, whisk together all the ingredients for the butter in a bowl and place the bowl near or in the oven to just melt it

  18. with all the parts ready, you can assemble, place the waffles onto a warmed plate, top with chicken and drizzle generously with the butter and garnish with chilli slices and green onions if you like

  19. that's it...dig in with a fork and knife or pick it up with your hands and eat!!
