You need to eat



This is a classic and it's really easy to see why. Deep and rich, you can taste the love that went into it and it is remarkably easy to make and is virtually foolproof. Try to use a decent red wine and try for the same wine you'll serve alongside the finished dish. By this I don't mean the exact same but if you're drinking merlot, use merlot, but use a cheaper kind by all means. This dish is even better the next day, so make lots!!

Here's what you'll need

  • 1 whole chicken (cut into whatever pieces you like)
  • 6 slices of bacon (cubed)
  • 15 pearl onions (peeled)
  • 1 whole head of garlic (peeled and minced)
  • 2 cups chicken stock
  • 2 cups red wine
  • 1 decent bunch of fresh thyme
  • 1 decent bunch of fresh parsley
  • 1 decent bunch of fresh rosemary
  • 3 or 4 bay leaves
  • 500 grams fresh button mushrooms
  • 2 tbsp butter
  • salt and pepper
  1. brown the bacon in a deep pot with a lid until crisp

  2. remove from the pan into a big bowl

  3. now season the chicken, and add to the pan (adding a bit more butter if needed, a few pieces at a time, not overcrowding, skin side down first until nicely brown and toss into the big bowl as you brown the rest

  4. now, add a bit more butter (if needed) and toss in the onions and cook until nicely caramelized, then add the garlic and cook a few more minutes

  5. now, sautee the mushrooms until browned well, then season and remove to another bowl and set aside

  6. deglaze the pot with the red wine then add the chicken stock and herbs (tied together with string)

  7. now toss the contents of the first big bowl back into the pot, including all the juices that will have inevitably gathered at the bottom of the bowl

  8. pop the lid on, turn down the heat and let bubble away for an hour or so, taking the lid off for the last half of cooking

  9. in the last few minutes, add the mushrooms back in and simmer to just heat through

  10. that's it...just serve up with whatever sides you like, a nice red wine and loads of fresh crusty bread and butter!
