If you get any takeaway chicken anywhere, you will pay a small fortune for it. Why not make it yourself for a small fraction of the price? This is a great recipe and tastes amazing. Don't skip the brining! Brines make meat juicy, succulent and flavourful. You can use all purpose flour if you don't have semolina or rice flour, but these will add a nice texture to the coating.

Here's what you'll need

  • 1 whole chicken (cut into thighs, drums, wings and breasts
  • 1 cup all purpose flour
  • 1 cup semolina flour
  • ¼ cup powdered chicken gravy mix
  • ¼ cup rice flour
  • 2 tbsp paprika
  • 2 tbsp ground thyme
  • 2 tbsp ground rosemary
  • 2 tbsp dried parsley
  • 1 tbsp dried thyme
  • ½ cup salt
  • ¼ cup sugar
  • 10 cups cold water
  • deep fryer set to °325
  1. cut up the chicken into 8 pieces

  3. in a large non-metallic container, mix the sugar, salt and water until dissolved

  4. toss the chicken pieces in and put in the fridge for 12 to 24 hours (I added some dried rosemary this time, but you don't have to add anything)

  6. mix the different flours and spices into a large shallow pan

  8. remove the chicken from the brine and dredge in the dried ingredients

  10. set aside for about an hour until the chicken is room temperature

  11. deep fry two or three peices at a time depending how big your deep fryer is (don't overcrowd them)

  12. each batch should take 8 to 10 minutes...you'll know they're ready when they're golden brown

  13. place the fried chicken onto an sheet tray and bake in a preheated °350 oven for another 10 minutes or so or until the juices run clear
