ROSEMARY'S CHICKEN

This is simplicity at it's best. Lovely rosemary, garlic, olive oil and simple seasoning are all you need and trust me when I say that you will be making this over and over again. I really love to use dark meat for this as it will stay moist and can take any kind of punishment a novice cook can throw at it. Virtually foolproof.

Here's what you'll need

  • 4 chicken thighs
  • 4 chicken drums
  • 2 tbsp fresh rosemary (finely chopped)
  • 4 tbsp olive oil
  • 1 whole head of garlic (sliced or just peeled)
  • salt and pepper
  1. in a big bowl, mix the olive oil, garlic and rosemary

  2. season the chicken really well with salt and pepper

  3. toss the chicken in the bowl and mix well with your hands to make sure every piece is well coated on all sides

  4. place chicken skin side up in a baking dish, making sure you don't overcrowd them

  5. ROSEMARY'S CHICKEN

  6. bake in a 350° oven for 1 hour or until they're cooked all the way through

  7. allow to rest for 5 minutes or so and serve up with any side you like
