Tsui Hang Wings

TSUI HANG WINGS

Many nights spent bar hopping around Vancouver, not ready to go home and yet all the bars were closing. As often in this predicament, one would often find themselves in Tsui Hang on Granville, drinking beer after hours. This is where I first had these wings! They are soooooo good! To give it that authentic taste, I suggest drinking beer from teapots.

Here's what you'll need

  • 2 pounds chicken wings
  • 1 cup rice flour
  • 2 tbsp soya sauce
  • 1 tbsp sugar
  • 1 tbsp fresh ginger (finely chopped)
  • 5 garlic cloves (finely minced)
  • 1 tbsp rice wine vinegar
  • 1 handful red chillies (or much or as little as you like)
  • 1tbsp sesame oil
  1. season the wings really well with salt and pepper and dredge in the rice flour

  2. toss into a preheated deep fryer until cooked through (about 6 to 8 minutes)

  4. meanwhile, sautee the garlic, chillies and ginger in sesame oil in a large wok (if you have one)

  5. add the soya sauce, sugar and rice vinegar and simmer a few more minutes

  6. when the wings are ready, toss them in the sauce to coat them...done!
