BAKED TORTILLA, EGG & CHORIZO PIE

I made this for breakfast and it was an instant hit. Who doesn't love chorizo and cheese? Among other things, like peppers, eggs and tortillas. Serve up for a late breakfast or brunch with a dollop of sour cream and some lightly dressed greens. Meat, eggs, home fries and the bread all in one dish...easy to make and even easier to eat.

Here's what you'll need

  • 4 eggs
  • 1 large tortilla (8-inch)
  • ½ red pepper (chopped)
  • ½ orange pepper (chopped)
  • ½ green pepper (chopped)
  • 2 jalapenos for the top (sliced)
  • 4 cloves garlic (minced)
  • 1 small onion
  • ½ cup corn
  • ¼ cup currants
  • 1 medium tomato (diced)
  • 1 tsp paprika
  • 2 tsp chopped parsley
  • 1 cup diced chorizo
  • ½ grated cheddar
  • 2 tbsp olive oil
  • 1 small bunch cilantro
  • 3 small potatoes (small dice)
  • 2 lime (zested and juiced)
  • salt and pepper
  1. sautee the chorizo with the onion, peppers and garlic until completely cooked down (about half an hour) on medium low heat

  3. add the tomatoes, currants and corn and simmer another 20 minutes, or until the tomatoes have completely broken down, and set aside

  4. meanwhile, boil the potatoes in salted water until cooked

  5. toss them in olive oil, salt and pepper, paprika and chopped parsley and bake in a °350 preheated oven for about 15 minutes until golden brown and crisp

  6. meanwhile, grease the inside of a pie tin and gently press the tortilla into it

  8. lay the potatoes on the bottom of the tortilla shell

  10. pour on the chorizo mixture

  12. make 4 small indents and crack the eggs in

  14. top with cheese, jalapeno slices, lime juice and zest

  16. bake for 15 minutes

  17. when it's ready, sprinkle on the cilantro and squeeze on more lime

  19. cut into 4 between the eggs and serve with greens, a dollop of sour cream and lime wedges
