Got a man around for breakfast? This is the best thing to whip up...he will be eating out of your hand. Make sure to season the steak well and it should ideally be cooked to medium rare.

Here's what you'll need

STEAKHOUSE BENNY WITH PARSLEY HOLLANDAISE
  • ½ pound beef tenderloin steak (or any good quality steak)
  • 1 cup mushrooms (sliced)
  • 1 small shallot
  • 2 cloves garlic (minced)
  • 1oz brandy
  • 2 english muffins
  • 2 large eggs
  • salt and pepper

Here's how

BLENDER HOLLANDAISE

4 egg yolk (room temperature)
1 oz warm water
Juice of 1/2 lemon
3 1/2 sticks of whole butter
¼ cup parsley puree mustard
1 tbsp mustard
Salt and pepper

Making this hollandaise is really easy and serves two generously. First, you need to heat the butter until hot and foamy (must be at least 80° to cook the yolks). Then, toss the egg yolks and water into the blender and whirl for 5 seconds or so. With the blender on, drizzle in the butter in a steady and quick stream. Quickly add the lemon juice, mustard and season really well. Then stir in the chopped parsley and that's it! You're done...just pour over your benny.





  1. in some butter, sautee sliced mushrooms until deep brown

  2. add onions and garlic...cook until frangrant

  3. pour in the brandy and light it up

  4. season really well and set aside

  6. season and sear the steak, allow it to rest and slice it up

  7. toast up the english muffin until crispy

  8. top with steak, mushrooms, eggs and then drizzle on the hollandaise
