Game meats are one of those things that people either love or hate. I'm one of those who happens to love it and I haven't come across any that I haven't liked...yet. The flavour is more pronounced than regular meat.

ELK, WALNUT PESTO, SWEET POTATO PUREE & ROASTED CAULIFLOWER
In this dish has earthy, roasted flavours and textures. There are a lot of components, I think together, sing. This is something you make for a special occasion or when you want to show someone you care to make the effort.
BLACKENED KANAGAROO FILET WITH POTATO & SWEET POTATO SHOELACE FRITES
Kanagaroo just popped up in my local supermarket and I couldn't resist. Kangaroo is a very neutral and lean meat, so it can take on a lot of flavour really well. If you can't get kangaroo, or are too squeemish, then by all means, use anything from steak to duck or venison. Enjoy!
VENISON, POTATO AND CARROT ROSTI WITH SPICY CURRY BUTTER SAUCE
Venison and curry are a match made in heaven and when you add fluffy potatoes and sweet carrots, it is absolutely harmonious. Although this may sound a bit complicated, it is actually really simple, easy and quite quick to make. Elegant dinner in no time at all and all will be impressed!
RABBIT RAGOUT, BAKED GRYERE POLENTA & TOASTED OATS AND NUTS
Rabbit is surprisingly easy to deal with as it really reminds me of chicken in how it's broken down. I slow cooked it with wine, vegetables and chicken stock until it was fall-off-the-bone tender and served it up with lovely toasted oats and seeds to add a nice, much needed crunch and texture. Give this a go! Comforting on a cold day!
VENISON TENDERLOIN WITH BARLEY RISOTTO, GARLIC BUTTER AND TOASTED OATS
Needing to impress someone? This will definitely do it! Venison is so good and when you add the barley risotto and perfectly crunchy toasted rolled oats (not just for breakfast...who knew?) it is just pure heaven! Deep earthy flavours and relatively easy to make!
DUCK PIE WITH DUCK FAT PASTRY
I'm not a master baker or anything even close to it, but this hot water pastry is really easy and forgiving and it turns out amazingly crisp and light, almost fool proof. I recently roasted a whole duck and was wondering what to do with it, so I decided to make this. I used the bones to make a stock for the filling and used the shredded meat for that as well, and used the fat for the dough. Super intense duck flavour!!
BACON WRAPPED VENISON, ASIAGO MORNAY SAUCE, ROASTED BEETS & SPINACH
This dish is all the best of comfort foods with an elegant, or elevated twist. Cheesy sauce, salty bacon and earthy spinach work really well with game meats. Venison tenderloin lends itself really well to being wrapped in bacon as it doesn't need but a few minutes on each side, precook the bacon 75% of the way, you will have nicely seared venison and crispy bacon.
RED WINE BRAISED VENISON BANGER AND PARMESAN MASH WITH ONION GRAVY
I love venison, so when I saw these venison sausages, I couldn't pass them up. I went hearty and savoury with these. I braise them slowly in red wine until the pan is completely dry and the sausages are sticky, gooey and deep, deep red. Enjoy with a nice pint of dark beer and you'll be transported to a country pub...if only in your mind.
OSTRICH STEAK WITH ROSTI AND COFFEE BACON SAUCE
Ostrich is something I've wanted to try for a while now, so I couldn't resist it when I finally found it a my local shop. I know it's lean and healthy for you as far as red meat goes. It was wonderful! I paired it with a nice rich and lighlty bitter sauce to give it some punch. Give it a go!
DUCK BREAST ON BARLEY RISOTTO WITH TOMATO CURRANT SAUCE
I am on a huge duck kick at the moment. I just love it as great alternative, it eats like chicken and steak at the same time. While it's super simple to make, you do have to be careful not to overcook it. Today, I paired with a really creamy barley risotto and a tangy and sweet tomato and red currant sauce that compliments and contrasts nicely.
VENISON GRATIN, BUTTERED TAGLIATELLE & ROASTED VEGETABLE SAUCE
I had a bit of venison, and a craving for pasta...this seemed a natural solution. Crispy bread crumbs mixed with salty parmesan is perfect on a nice juicy piece of meat! Then the deep flavours of roasted tomatoes, onions and garlic, sweet and tangy at the same time make a really nice contrast to the whole dish yet it is all harmonious. Dig in!
BRAISED DUCK AND BLUE CHEESE PASTRIES
I recently made roasted duck and had a bit left over, so lunch the next day seemed like an obvious choice. I thought blue cheese would be a nice addition to the mix and it really worked! I added bacon, almonds and apples too.
VENISON & ROASTED ONION DOUGH BALLS
I recently got really nice venison sausages and a few left over. Not enough for a full meal, so I came up with this to use them up and it worked really well. Roasting the onions and garlic made them sweet, the meat was savoury and I tossed in some dried currants to add a little tart punch. Wrapped it in little balls of dough and deep fried them. Perfect little bites for a nice snack.
