BRAISED DUCK AND BLUE CHEESE PASTRIES

I recently made roasted duck and had a bit left over, so lunch the next day seemed like an obvious choice. I thought blue cheese would be a nice addition to the mix and it really worked! I added bacon, almonds and apples too.

Here's what you'll need

  • 2 cups cooked and shredded duck
  • ½ cup crumbled blue cheese
  • 1 package puff pastry (375g)
  • ¼ cup slivered almonds
  • 1 apples (any kind you have, diced)
  • 6 sliced bacon slices
  • 1 small onion or shallot
  • 2 cloves garlic (finely minced)
  • 1 egg (for egg wash, whisked with a dash of water)
  • salt and pepper to taste
  1. toast almonds in a dry pan and remove

  2. add bacon and cook

  3. add onions, garlic and apples and cook until soft and translucent

  4. add shredded duck and cook until just warmed through

  5. remove from the heat, add almonds and blue cheese

  6. roll out puff pastry and cut into triangles (or whatever shape you want)

  7. brush them with egg wash and bake in a preheated 350° oven for 10 minutes

  8. remove them from the oven and cut the pastry in two (like a sandwich)

  9. fill the pastry with the duck mixture

  10. serve with a nicely dressed salad
