You need to eat



Ostrich is something I've wanted to try for a while now, so I couldn't resist it when I finally found it a my local shop. I know it's lean and healthy for you as far as red meat goes. It was wonderful! I paired it with a nice rich and lighlty bitter sauce to give it some punch. Give it a go!

Here's what you'll need

  • 2 ostrich fillets
  • 1 tsp butter
  • 1 tsp flour
  • 1 tsp tomato paste
  • ¼ beef stock
  • 3 slices bacon
  • 1 small shallot (finely chopped)
  • 1 clove garlic (finely minced)
  • 1 tsp instant coffee
  • 3 medium sized potatoes
  • 1 egg yolk
  • 2 tbsp dried parsley
  • 2 tbsp flour
  • salt and pepper to taste
  1. peel the potoatoes and grate them with a cheese grater onto a clean and dry kitchen towel

  2. pull the corners of the towel up and wring the grated potatoes over the sink until there is no liquid left

  3. toss them into a bowl with the rest of the ingredients and mix well

  4. scoop out ⅓ of the mixture at a time and place onto a heated pan with olive oil and smoosh them down a bit

  5. sautee them over medium heat for about 5 minutes on each side

  6. place them on an oven tray and bake in a °350 degree oven for another 8 minutes or so

  7. in the meantime, sautee the shallots, bacon and garlic in butter until translucent and fragrant

  8. add the flour and cook for about 5 minutes, stirring constantly

  9. add the beef stock, tomato paste and instant coffee

  10. season well and simmer until thickened

  11. when everything is ready, heat up a pan on high heat until just about to smoke

  12. season the steaks well on both sides and toss them into the pan

  13. sear well for 2 to 3 minutes per side (or to your desired doneness but don't overcook them as they will dry out)

  14. take them out of the pan and let them rest for at least 3 or 4 minutes

  15. toss the rosti onto a warmed plate, top with the steak and drizzle in the sauce...I suggest some simple roasted green veg on the side
