You need to eat



Anyone who loves ribs will love beer, and anyone who loves beer will love these beer-braised ribs. Slow cooked in a dark amber beer, cilantro, parsley and lemon. They're cooked until the meat falls off the bone, but then I throw them on the grill with my homemade BBQ sauce to get that really great caramelized char that everyone can't get enough of...sticky, sweet and completely addictive.

My suggestion? Buy a pestle and mortar! This will make your life much easier. They have been around as long as cooks have, and there's a reason for that. They can be a little pricey, but worth it...go get one!

Here's what you'll need

  • 2 pound pork ribs
  • 1 medium onion (roughly chopped)
  • ½ cup chopped parsley
  • ½ cup chopped cilantro
  • 1 tbsp whole cumin
  • 1 tbsp whole coriander
  • 1 tbsp whole peppercorns
  • 1 lemon (juiced and sliced)
  • 1 tall can dark amber ale
  • 1 cup ketchup
  • ¼ cup brown sugar
  • 6 garlic cloves (finely minced)
  • 2 tbsp red wine vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp chili powder
  • salt and pepper
  1. cut the ribs into managable portions and seasone well with salt

  2. in a pan on high heat, toast the cumin, coriander and peppercorns until they just start to smoke...mash them up in a pestle & mortar and rub all over the ribs

  3. sprinkle with fresh parlsey, cilantro and lemon slices, then pour on the beer, just enough to cover the contents of the pan


  5. wrap in foil and bake in a 300° oven for 3 hours

  6. take the pan out of the oven, but don't take the foil off, just set the pan aside to cool completely

  7. in a pot, sautee garlic and chili power until cooked (about a minute or two)

  8. take off the heat and add keptchup, sugar, vinegar and worcestershire sauce, season and mix well

  9. Leave the ribs in the pan until you're ready to grill. When you are ready...clean the ribs off as best as possible. Then, slather them with BBQ sauce and toss them on the grill! Serve them with loads of napkins!
