GREEK LAMB PLATTER

I adore roasted lamb! Lemon and anchovies make really savoury and lemon potatoes, grilled zucchini and cheese stuffed cherry tomatoes completes this "platter". Give this a try!

Here's what you'll need

Roast Leg of Lamb

  • 1 whole leg of lamb (room temperature)
  • 1 whole head of garlic
  • 1 lemon (1 sliced thick and 1 juiced and zested)
  • ¼ cup olive oil
  • 2 tbsp dried oregano
  • 1 tbsp allspice
  • 4 anchovy fillets
  • salt and pepper to taste

Lemon Roasted Potatoes

  • 4 potatoes
  • 1 whole lemon
  • 2 tbsp olive oil
  • 2 tbsp chopped fresh dill
  • salt and pepper to taste

Cheese Stuffed Tomatoes

  • 12 cherry tomatoes
  • 1 tbsp feta
  • 1 tbsp cream cheese
  • 10 kalamata olives
  • 1 tsp dried oregano
  • 2 cloves roasted garlic
  • 1 anchovy fillet
  • 1 tsp lemon juice
  • salt and pepper to taste

Grilled Zucchini

  • 2 zucchini
  • 1 tbsp olive oil
  • salt and pepper to taste
  1. cut small incision into the lamb and stud with garlic cloves

  2. season the roast really well with salt and pepper on all sides

  3. mash the anchovies with the oregano, allspice, olive oil and lemon juice and zest and smear half the mixture onto the lamb, pop into an baking dish and pour the rest of the mixture on...at this point you can bake it or pop it back into the fridge for a day to marinate (just remember to get it back to room temperature before you cook it)

  5. cover with foil, and pop into a preheated 350° oven for half an hour, then remove the foil and continue baking for 50 to 60 minutes

  6. take out of the oven, cover loosely with foil and rest at least 10 minutes

  7. now the potatoes, cut the lemon up into thick slices and cube up the potatoes (bite sized pieces)

  9. toss into a pot with a generous amount of salt and simmer until potatoes are cooked through (about 20 minutes)

  11. drain and toss the potatoes in a bit of olive oil, season a bit with salt, pepper and dill and pop into a preheated 350° oven for 15 minutes or until golden and crisp

  13. now the tomatoes, cut the tops off and scoop out the innards with a small spoon, toss in a bit of olive and season

  14. mash up the rest of the ingredients in a bowl and scoop into the tomatoes

  16. bake in a preheated 350° oven for about 10 minutes until they're soft and the cheese is browned

  17. cut the zucchini into thick slices, toss in olive oil and season

  18. grill them until cooked and they have nice grill marks

  20. plate everything up and serve!
