JERK LAMB ROAST WITH FRIED PLANTAINS AND PICKLED ONIONS

Leg of lamb is tasty and easy to make. I sometimes struggle with what to flavour it with. There's the traditional, but I really wanted to make something special...JERK! I had to make plantains, simply because I'd never cooked them before and then pickled onions just seemed to go naturally as it would cut through the bold flavours and add a nice acidity.

Here's what you'll need

  • 1 tbsp ground allspice
  • 1 tbps ground black peppercorns
  • 1 tbsp ground paprika
  • 1 tbsp brown sugar
  • 2 tbsp dried thyme
  • 2 tbsp salt
  • ¼ tsp nutmeg
  • 6 cloves garlic (roughly chopped)
  • 1 tbsp ginger (ground or fresh minced)
  • 2 jalapenos (roughly chopped)
  • 1 room temperature leg of lamb (bone in)
  • 2 plantains
  • 2 tbsp olive oil
  • 1 medium onion (sliced)
  • 1 cup white vinegar
  • salt and pepper

    THE LAMB

  • toss the first 10 ingredients in a food processor and blitz until it's a nice puree

  • season the lamb leg and smear with the jerk puree

  • add just enough water to cover the bottom of the roasting dish and toss into a preheated °350 oven for about an hour

  • check the lamb with a meat thermometer until it reaches °130 for medium rare...if it's not there yet, pop it back in and check it every 10 minutes or so

  • let it rest for 10 minutes or so in a warm spot in your kitchen before carving


  • THE PLANTAINS

  • cut the plantains into thick slices

  • carefully peel them with your hands (but you might have to use a knife)

  • fry the slices in olive oil

  • when they're browned on both sides, transfer them to a paper towel and crush them carefully with the back of a wooden spoon

  • fry them again until golden and crisp (1 or 2 minutes per side) and when you flip them, be sure to season when they're still "wet"


  • PICKLED ONIONS

  • in a shallow pan, gently heat the vinegar until steaming but not boiling

  • take off the heat and toss in the sliced onions

  • allow to cool completely

  • carve up the lamb and serve it all up on some rice, the plantains, onions and dig in
