Lamb Curry Pizza with Cashews & Mango Salsa

LAMB CURRY PIZZA WITH CASHEWS AND MANGO SALSA

I recently made a lovely lamb roast and of course had tons left over so I decided to make this to give it a whole new life. Even if you have reservations about fruit on your pizza (I know I do), this will not conflict with your beliefs. The salsa adds a nice acidity and sweetness that balance the curry and cashews and further balanced by cooling yogurt drizzled on at the very end.

Here's what you'll need

  • 2 cups leftover roasted lamb (roughly sliced)
  • 1 tbsp whole cumin
  • 1 tbsp whole coriander
  • 1 tbsp whole fennel seeds
  • 1 tbsp whole mustard seeds
  • 1 tbsp fenugreek
  • 1 tbsp turmeric
  • ½ tsp cinnamon
  • 1 large onion (finely chopped)
  • 1 whole head of garlic (finely chopped)
  • 2 cups chicken stock
  • 1 cup thick yogurt (divided)
  • 1 mango (small diced)
  • 2 or 3 green onions (thinly sliced)
  • 1 lime (zested and juiced)
  • 1 large handful fresh chopped cilantro (divided)
  • 1 jalapeno (thinly sliced)
  • ½ cup raw cashews
  • 1 ball fresh mozza
  • ½ cup crumbled feta
  • 1 batch of pizza dough
  • salt and pepper to taste
  1. in the meantime, make this ( pizza dough)

  3. heat all the whole spices in a dry pan over high heat until just about to smoke

  4. crush in a pestle and mortar (or spice grinder) and add the other spices

  5. toss the spices in with the onions and garlic into a pot with a bit of olive oil and cook until deep dark brown (about 10 to 15 minutes)

  6. add the chicken stock and simmer 15 minutes or so until reduced and thickened

  7. remove from the heat and stir in the yogurt, set aside to cool almost completely

  8. now the salsa, in a bowl, mix together the mango, green onions, half the cilantro, chillies and lime zest and juice

  9. gently knead your dough onto a baking sheet until you have the thickness and size you like

  10. ladle on the curry sauce, add the lamb, sprinkle on the salsa, lay on the cheeses and cashews

  12. toss into a preheated 400° oven for 15 minutes or until the cheese is melty and the dough is nice and crisp on the bottom

  14. garnish the pizza with the rest of the cilantro and yogurt

  15. cut up and serve!
