I think moving to a new flat, in a new area is always exciting because you get to go to all new shops. Directly next door to us is an East Indian food shop and they sell lamb ribs. I was immediately curious and needed to try them. While I found them really delicious, they were quite sparce on the meat. We had a rack for dinner and I made these stuffed agnolotti later in the week with the other rack.

Here's what you'll need

LAMB RIBS, HOMEMADE BBQ SAUCE WITH TANGY ROASTED POTATOES

  • 2 pounds lambs ribs
  • 1 tbsp whole cumin
  • 1 tbsp whole coriander
  • 1 tbsp whole fennel seeds
  • 1 tbsp whole mustard seeds
  • 1 tbsp turmeric
  • 1 tsp cinnamon
  • 1 large onion
  • 1 whole head of garlic
  • ½ cup ketchup
  • ¼ cup pomegranate molasses
  • 3 baking potatoes
  • 2 tbsp olive oil
  • 3 tbsp white wine vinegar
  1. heat all the whole spices in a dry pan over high heat until just about to smoke

  2. crush in a pestle and mortar and add the other spices

  4. rub the lamb ribs with spices and season well

  6. toss them into an oven pan, add garlic and onions with enough water to almost cover the lamb

  7. cover with foil and bake in a preheated 350° oven for 2 hours or until the meat falls off the bone

  8. meanwhile, make the BBQ sauce

  9. in a bowl, whisk together ketchup, pomegratnate molasses, crushed garlic and sugar

  10. take the ribs out and let them cool

  11. toss boiled potatoes (while they're still hot) with olive oil, white wine vingar, season well allow to cool slightly

  12. toss them into a 350° until golden and crispy

  13. slather the ribs with the bbq sauce and grill them or toss them under the broiler for a few minutes until caramelized
