CHEESY BLACK PUDDING PINWHEELS

After moving to Scotland last year, I have grown to love that once dreaded black pudding. Some may love it, some may hate it, but this may be a good way to introduce it as the black pudding is a bit more subtle in flavour. One afternoon, with a fridge full of odds and ends and a hungry man, I had to come up with a quick and tasy lunch. I pulled everything out, chopped it up, cooked it and tossed it into some puff pastry. And voila! It actually turned out really delicious and it all looked like I did it on purpose instead of just throwing leftovers together.

Here's what you'll need

  • 4 thick slices of black pudding
  • 1 bagged greens (watercress, spinach and arugula)
  • 2 cups grated cheddar (older the better)
  • 1 cup diced pancetta
  • 1 whole head of garlic
  • 1 small onion (finely chopped)
  • 1 package puff pastry
  • 1 egg (whisked with a splash of milk for egg wash)
  • 1 package fresh mozzarella
  • salt and pepper
  1. wrap a whole head of garlic in foil and bake in a °325 oven for 30 minutes or until soft and golden brown

  2. in a pan, sautee pancetta until just crisp

  3. toss in the onions and cook until translucent

  4. add greens and cook until wilted but still vibrant green (about 5 minutes) and you may need to add a splash of water if needed to help them steam a bit (but not too much, you want the mixture dry)

  6. scoop out into a bowl and crumble in the black pudding

  7. mix it all up and allow to cool completely

  9. roll out the puff pastry on a floured countertop

  10. smear the black pudding mixture evenly on the pastry

  12. roll it all up and use the egg wash to seal the end

  14. cut the pastry log into one inch thick slices

  16. place cut side up and brush with egg wash on top and all sides

  18. bake in a °350 oven for 20 to 25 minutes or until gold and crisp

  20. serve it up with mustard dressed salad (mustard, olive oil, red wine vinegar and a pinch of sugar)
