CLASSIC CHICKEN TACOS

Around here, tacos are a treat and we get excited! Blending the spices, cooking the meat and getting all the mise en place in order is a labour of love. And the payoff is amazing!

Here's what you'll need

  • 1 tbsp whole coriander
  • 1 tbsp whole cumin
  • 4 tbsp chilli powder
  • 1 tbsp whole mustard seeds
  • 1 tbsp whole fennel seeds
  • 2 large chicken breasts
  • 1 bottle of lager
  • 1 medium onion (finely chopped)
  • 4 cloves garlic (minced)
  • ¼ head of iceberg lettuce...yes, iceberg!
  • 1 cup diced tomatoes
  • fresh cilantro and parsley
  • 8 tortillas
  • 1 cup grated cheddar
  • 1 cup sour cream
  • salt and pepper
  1. heat the whole spices in a dry pan and grind in a pestle and mortar

  2. add vegetable oil a pan and brown the chicken breast with the onions and garlic

  3. add the spices back in and add the lager

  4. cover, lower the heat and simmer for 30 minutes or so

  5. uncover, and simmer for 15 more minutes or until most of the liquid is gone

  6. when it's done, shred the meat with a fork

  7. for the salsa, mix chopped tomatoes, minced onions, cilantro and parsley

  8. wrap the tortillas in foil and heat for 10 minutes in the a 350° oven

  9. serve with sour cream, grated cheese, iceberg and fresh cilantro to garnish
