SPICY CORN FLAKES CRUSTED CHICKEN WRAP

Corn Flakes give chicken the perfect crunch that you just won't get with regular bread crumbs or even panko and you need real crunch to make these. The batter needs to stand up to the sauces to keep texture and Corn Flakes deliver. Spicy sauce, lettuce and a cool sour cream and cilantro sauce is the perfect combo for a simple lunch or dinner.

Here's what you'll need

  • 2 chicken breast (cut into strips or chunks)
  • 4 cups Corn Flakes
  • 2 eggs (whisked)
  • ½ cup flour (more or less)
  • ¼ cup honey
  • 1 tbsp mustard (any kind you like...and maybe more if you like it punchier)
  • 4 torilla shells
  • 1 bag greens
  • 1 small yellow pepper (cubed)
  • 1½ cup sour cream
  • 1 lime (juiced and zested)
  • 1 bunch cilantro (chopped)
  • sriracha to drizzle (as mush as you like, but also optional...but recommended)
  • salt and pepper
  1. season the chicken with salt and pepper

  2. in a pestle and mortar, crush the Corn Flakes, but not to a complete dust, you want some to be a bit bigger to make sure you get the best crunch

  4. dredge the chicken pieces in the flour, then the egg and then in the Corn Flakes

  6. toss into a preheated °350 deep fryer until cooked all the way through, golden and crisp (about 4 or 5 minutes depending how big they are)

  7. season them with salt as soon as they come out and you can cut or leave whole

  8. meanwhile, in a bowl, mix sour cream, lime juice and zest and cilantro and smear onto the toritlla

  9. add the lettuce and yellow peppers

  15. once rolled up, heat a dry fry pan and place the wrap, seam side down in to to seal it up and keep turning every few minutes to brown and crisp all over

  16. cut in half if you like and you're ready to go
