CROQUE MONSIEUR

If you're in the mood to jazz up your ham and cheese sandwich, this is the best way to do it. Classically french and absolutely delicious. I happen to love Gryere and this a lovely way to showcase it.

Here's what you'll need

  • 10 slices ham (get some really nice ones, it'll be worth it)
  • 1 small shallot (finely chopped)
  • 2 cloves garlic (minced)
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 cups milk
  • 4 tbsp dijon mustard
  • 8 slices bread
  • 1 cup Gryere (grated)
  • salt and pepper
  1. gently sautee the onions and garlic in butter (be careful not to brown them as you want a really nice white sauce)

  2. add flour and cook for 3 -4 minutes

  3. lower the heat, add the milk and whisk to incorporate well

  4. season well

  5. take two slices of bread, add sliced ham, mustard, a generous sprinkling of cheese and a bit of the sauce

  7. put the top slice on your sandwich, laddle on sauce and top with more cheese

  9. bake in a preheated 350° oven for about 8-10 minutes or until melty and browning (keep an eye on them as they could burn quickly)

  10. serve nice and warm with a dressed salad or soup
