HUMMUS AND CHORIZO FLATBREAD

One afternoon, with a fridge full of odds and ends and a hungry man, I had to come up with a quick and tasy lunch. I pulled everything out, chopped it up, cooked it and tossed it onto some leftover flatbread. And voila! It actually turned out really delicious and it all looked like I did it on purpose instead of just throwing leftovers together.

Here's what you'll need

  • 1 package shop-bought naan bread
  • 300g hummus
  • 1 cup left over roast chicken
  • ¼ cup diced chorizo
  • ¼ cup diced red bell pepper
  • 4 cloves garlic (minced)
  • 2 medium tomatoes (roughly chopped)
  • ¼ cup kalamata olives (pitted and chopped)
  • 1 package fresh mozzarella
  • ½ cup feta cheese
  • 2 tbsp sumac
  • 2 tbsp sesame seeds
  • fresh cilantro and parsley
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • salt and pepper
  1. in a pan, sautee chorizo, peppers, tomatoes and garlic until all cooked and caramelizing nicely...about 8 minutes

  2. add the tomatoes and olives in and simmer until most of the liquid is gone

  3. shred the leftover chicken, toss into the pan and heat until just warmed through

  4. smear the flatbread with a nice thick layer of hummus

  6. top with the chorizo and tomato mixture

  7. then top the lot with the mozza and feta

  8. sprinkle with sumac, thyme, sesame seeds and drizzle with olive oil

  9. pop into a preheated 375° oven until crisp and the cheese is all melted

  11. sprinkle with the fresh cilantro and parlsey

  12. cut up and dig in!
