JALAPENO CORN BREAD

Corn Bread is one of those recipes that delivers amazing flavour and is so satifying to make while being one of the easiest and virtually foolproof. A great way to dabble in the baking world without intimidation.

Here's what you'll need

  • 1¼ cup buttermilk
  • 3 tbsp butter
  • 1½ cup medium ground cornmeal
  • ½ cup flour
  • 1 tsp salt
  • 2 tbsp granulated sugar
  • ½ cup creamed corn
  • ½ cup frozen corn (thawed and dry)
  • 6 to 10 jalapenos (roughly chopped)
  • 1 egg
  1. in a big bowl, mix the dry ingredients

  2. in another bowl, whisk the egg and buttermilk together, add the corn and peppers then mix in with the dry ingredients (if it seems a bit dry, you can add a dash of buttermilk)

  3. grease the pan generously using all the butter and pour the batter in, smoothing out the top if you need to

  4. bake in a 375° preheated oven for 30 minutes or so, or until the bread is browned and coming away from the sides of the pan (also, a toothpick should come away clean when inserted into the middle of the loaf)
