ROASTED LAMB DONAIR WITH TZATZIKI

I recently made this really great Greek lamb platter and had some leftover lamb, so I knew I just had to make donairs! This is probably one of the best sandwiches on the face of the earth and it's way better than any one you get from any takeout joint anywhere. It's real meat and real tzatziki, you know exactly what went in them. Succulent and tangy meat, cold and crisp lettuce and creamy, smooth tzatziki...mmmmm

Here's what you'll need

The Lamb

  • 1 whole leg of lamb (room temperature)
  • 1 whole head of garlic
  • 1 lemon (1 sliced thick and 1 juiced and zested)
  • ¼ cup olive oil
  • 2 tbsp dried oregano
  • 1 tbsp allspice
  • 4 anchovy fillets
  • salt and pepper to taste

The Tzatziki

  • 1 cup thick yogurt
  • 1 cup sour cream
  • 1 medium cucumber (grated and finely chopped)
  • 2 cloves garlic (crushed)
  • 1 lemon (juice and zest)
  • 2 tbsp mint (finely chopped)
  • salt and pepper to taste

The Donair

  • 4 pitas
  • ½ head of iceburg lettuce (thinly sliced)
  • 1 large tomato (diced)
  1. cut small incision into the lamb and stud with garlic cloves

  2. season the roast really well with salt and pepper on all sides

  3. mash the anchovies with the oregano, allspice, olive oil and lemon juice and zest and smear half the mixture onto the lamb, pop into an baking dish and pour the rest of the mixture on...at this point you can bake it or pop it back into the fridge for a day to marinate (just remember to get it back to room temperature before you cook it)

  5. cover with foil, and pop into a preheated 350° oven for half an hour, then remove the foil and continue baking for 50 to 60 minutes

  6. take out of the oven, cover loosely with foil and rest at least half an hour or so, or until you can handle it with your bare hands

  7. carve it up and rip apart with your hands

  8. toss the meat into a pot with the liquid in the bottom of the roasting pan and simmer about an hour or until the meat just falls apart

  10. in the meantime, you can start your tzaziki... peel and grate the cucumber an chop up

  11. mix all the ingredients in a bowl

  12. allow it to sit (refridgerated) overnight as the flavours will develop with time

  13. the best way I've found to open up your pitas without ripping them is to wrap them up (individually) in plastic wrap and tossing them in the microwave for 30 seconds or so, and they should come apart fairly easily

  14. stuff the pitas with the lettuce, lamb, tomatoes and dollop on generous amounts of tzatziki and serve up with nice lemon wedges
