VENISON & ROASTED ONION DOUGH BALLS

I recently got really nice venison sausages and a few left over. Not enough for a full meal, so I came up with this to use them up and it worked really well. Roasting the onions and garlic made them sweet, the meat was savoury and I tossed in some dried currants to add a little tart punch. Wrapped it in little balls of dough and deep fried them. Perfect little bites for a nice snack.

Here's what you'll need

  • 3 venison sausages (or any sausage you have)
  • 1 medium onion
  • 1 whole head of garlic
  • ¼ cup dried currants
  • ¼ cup beef stock
  • 1 tsp dried thyme
  • 1 tsp flour
  • 1 tbsp butter
  • 1 batch of pizza dough
  • salt and pepper
  1. peel and cut the onion into quarters leaving the root attached

  2. season with salt, pepper and pinch of sugar and toss in olive oil

  3. wrap the whole head of garlic in a bit of foil

  4. place the onion quarters and garlic onto a baking sheet and bake in a preheated °300 oven for about 20 minutes or until they're soft and starting to caramelize

  6. cut the root off the onion and rough chop them (as big or small as you like) and squeeze out the garlic cloves and mash them with the side of a knife or spoon

  8. remove the casing from the sausages and sautee in a pan with a bit of butter and currants until just cooked (break it up with the back of a wooden spoon)

  9. add the flour and cook another 3 or minutes

  10. add the beef stock and simmer until thick and majority of the liquid is gone

  11. add the onions and garlic and set aside to cool completely

  13. rip off pieces of dough (about the size of a golf ball) and flaten in your hand

  14. scoop out a bit of the filling onto the centre of the dough

  16. carefully fold the dough over the filling and roll in your hand to make a smooth ball

  18. once you're all done, you're ready to fry

  19. carefully pop them into a deep fryer until they're golden brown and cooked through (about 5 minutes)

  21. when they're done, toss them in warm butter and parmesan

  23. serve with a tangy tomato sauce if you like
