4 CHEESE RAVIOLI WITH CHORIZO TOMATO SAUCE

Cheese is one of the best things on the planet. All hail the ones brave enough to first attempt making it and and the ones who ate it! Ravioli is a perfect vessel to eat it. After the holidays, I had all these cheeses leftover and couldn't decide which ones to put in this, so I just put them all in. The simple tomato and chorizo sauce is perfect for this as well.

Here's what you'll need

  • pasta dough
  • ¼ cup blue cheese
  • ¼ cup ricotta
  • ¼ cup parmesan (grated)
  • ¼ cup cream cheese
  • 1 whole head garlic (finely minced)
  • 1 small onion
  • 6 medium tomatoes (or 1 tin)
  • 1 tbsp tomato paste
  • 1 cup diced chorizo
  • 1 lemon (juice and zest)
  • 2 tbsp olive oil
  • salt and pepper to taste
    THE FILLING

  1. in a bowl, mash up all the cheeses together

  2. add ¼ of the minced garlic



  3. THE SAUCE

  4. sautee the chorizo, onions and garlic

  5. season the sauce

  6. scoop out your raviolis from the boiling water and toss them in the sauce

  7. always undercook your pasta a little and finish cooking it in the sauce...it will absorb the sauce and if you add some pasta water to the sauce, it will thicken it and make it all come together
