Crispy Chicken, Asian Noodles with Peanut Pesto

CRISPY CHICKEN, ASIAN NOODLES WITH PEANUT PESTO

If you're like me, you love noodles! I could have them everyday, literally! This is one of those simple easy recipes you can quickly whip for a midweek meal instead of getting a takeaway, but you can get all the credit!

Here's what you'll need

  • 2 chicken breasts (skinless, boneless)
  • ¼ cup peanuts (roughly chopped)
  • 2 lime (one zested and juiced and one cut into wedges to garnish)
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • ½ savoy cabbage (sliced thin)
  • 2 egg noodle nests
  • 3 cloves garlic (finely minced)
  • 1 good nub of ginger (finely minced)
  • 1 good bunch cilantro (finely chopped)
  • salt and pepper to taste
  1. in a bowl, mix the soy sauce, lime juice and zest, hoisin sauce and peanuts...set aside

  2. season the chicken well with salt and pepper, toss, skin side down into a preheated frying pan with a bit of vegetable oil until the skin is nice and crip, flip and transfer them to a baking tray and toss into a preheated 350° oven until cooked all the way through (about 10-12 minutes)

  3. in the meantime, boil some salted water, toss in the noodles for 5 minutes or so, drain and submerge the noodles in cold water and set aside

  4. add a bit more oil in the same frying pan you cooked the chicken, sautee the onion, garlic and ginger over medium low heat until cooked (about 5-8 minutes)

  5. add the cabbage, season and cook 5 more minutes or so

  6. drain the noodles and toss those in there and give it a few good tosses until heated through (about 3-4 minutes)

  7. add half the sauce and toss another couple of times

  8. when the chicken is fully cooked, take them out of the oven, loosely cover with foil for a few minutes to rest, then slice

  9. toss into big bowls, garnish with the lime wedges, drizzle with the rest of the pesto and dig in!
