LASAGNA

ROASTED TOMATO LASAGNA

This is one of the best lasagnas you will ever make! It is so easy! Traditional lasagnas have layers of sauce, meat, cheese and pasta sheets. This lasagna is completely encased in pasta sheets. The inside is soft and cheesy, while the outside is carmelized and crispy. A truly unique lasagna. You can make a large lasagna using this method, but I like to make these in indivual ramekins, giving everyone all four sides of crunchy pasta.

Here's what you'll need

LASAGNA
  • 8 large tomatoes (quartered)
  • 1 medium onion (finely chopped)
  • 2 tbsp olive oil
  • 6 cloves garlic (finely minced)
  • 2 cups red wine
  • 2 tbsp dried oregano
  • pasta dough (rolled out into long sheets)
  • 1 medium carrot (grated)
  • 1 cup grated cheese (mozza, cheddar, blue cheese...anything you have on hand)
  • 1 lemon (juice and zest)
  • salt and pepper

  2. heat the pan, add generous amounts of olive oil, add onions, garlic, herbs, carrot and toss in diced tomatoes

  4. season the sauce and bake in a 250° oven for 2 hours, then puree in a blender with lemon juice

  7. assembling is fairly straightforward...layer the sheets of pasta in the bottom of a greased ramekins and up all sides, leaving extra over the edges to pull over the top

  8. then begin layering sauce, cheese and pasta sheets cut into rounds to fit inside the lasagna. You should try to get three layer

  9. pull the excess pasta sheets hanging over the edges over the top of the lasagna and drizzle with olive oil

  11. cover with foil and bake in a 350° oven for 40 minutes, remove the foil and bake another 10 minutes or until golden brown and crispy

  12. allow them to cool slightly for at least 10 minutes

  13. slide a butter knife along the edges, tip the ramekin into a clean dish towel to loosen from the ramekin and carefully place on a waiting plate or you can serve it in the ramekin if you like
