You need to eat



Spaghetti carbonara always seemed to be a bit intimidating to me and I have no idea all. This could not be any easier to make and is absolutely delicious. While some will cheat and put cream in the sauce, a true carbonara has only eggs as the sauce. I've added mint to this and it really works, but you can add any herbs, vegetables or meat that you like. Anything goes!

Here's what you'll need

  • 3 chicken breasts (cubed)
  • 5 slices bacon
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 small shallot (finely chopped)
  • 3 cloves garlic (minced)
  • 1 cups white wine
  • 1 tbsp grainy mustard
  • 2 tbsp fresh mint
  • 1 cup frozen peas (or fresh)
  • 1 lemon (juice and zest)
  • 3 eggs
  • 1 package spaghetti (500g)
  • ¼ cup fresh grated parmesan
  • salt and pepper

  1. gently sautee the bacon until 75% cooked in butter and olive oil and toss in the cubed chicken breast

  2. when cooked add shallots and garlic

  3. pour in some white wine and reduce until almost completely gone...add peas, lemon juice and zest for the last minute of reduction

  4. this is the time to taste for seasoning (if you're squeamish about raw eggs)

  5. add finely chopped mint, grainy mustard and allow everything to cool enough so you can add the eggs without scrambling them (about 10 ~ 15 minutes)

  6. crack in the eggs and whisk well

  7. cook noodles (keep some pasta water) and toss them in the sauce and add any pasta water if needed to make the sauce come together

  8. that's it...grate some fresh parmesan and serve!
