You need to eat



This dish really ticks all the boxes. I just love this sticky sweet pork and when you team it up with cheesy and rich pasta with smoky and fragrant cumin, it just heaven. Once you start eating it up, the two sauces become intertwined to make this really great combination that will knock your socks off!

Here's what you'll need

The Pork

    • 6 pork medalions
    • 5 cloves garlic (finely minced)
    • 1 small shallot (finely minced)
    • ¼ cup molasses (or treacle)
    • 1 tbsp grainy mustard
    • 1 tbsp english mustard
    • 1 cup cider (dry)
    • salt and pepper

The Pasta

  • 1 shallots (chopped finely)
  • 4 cloves garlic (finely minced)
  • ½ cup dry white wine
  • 2 cup milk
  • 3 tbsp butter
  • 3 tbsp flour
  • 1 cup grated cheddar
  • ½ cup grated mozza
  • 2 tbsp ground cumin
  • 3 cup rotini (or any short pasta you like)
  • salt & pepper to taste

  1. lay the medalions on a cutting board and gently press down on them with the palm of your hand


  3. season the pork well with salt and pepper and toss into nice and hot pan with a dash of olive oil

  4. sear well on both sides (about 3 minutes per), remove from the pan and set aside

  5. turn down the heat and toss in the shallot and garlic and cook a few minutes until translucent and soft and pour in the cider to deglaze the pan

  6. in a bowl, whisk the molasses and mustards and toss unto the pan...simmer on medium-low heat until reduced and thickened

  7. pour the pork back into the pan along with any juices on the plate

  8. simmer a few minutes, turning the pork to coat well on all sides

  9. now to the pasta, firstly, boil the noodles in salted water until cooked

  10. in another pot, sautee onions, cumin and garlic in butter until translucent and fragrant

  11. add the flour and cook about 5 minutes, stirring lots

  12. then add the white wine and simmer about 5 minutes to reduce a bit

  13. toss in the milk and simmer yet again until thickened slightly (about 5-8 minutes)

  14. remove the pot from the heat and add the cheeses gradually whisking the whole time to fully incorporate before adding more cheese

  15. stir in the pasta, pour onto warmed dishes and top with the pork...dig in!
