Olive Oil & Garlic Pasta


This is simplicity at it's best. Get a really good quality Kielbasa (as fatty as possible), fresh peas and garlic and toss with noodles and olive oil. You can use any long pasta you have on hand or roll out and cut your own. Easy peasy for a quick midweek dinner.

Here's what you'll need

  • 1 cup fresh peas (or frozen, but not canned, never canned)
  • 1 small onion (finely chopped)
  • 5 cloves garlic (finely minced)
  • ¼ cup olive oil
  • ½ cup Kielbasa (sliced)
  • ¼ cup fresh grated parmesan
  • 1 lemon juided and zested
  • pasta dough
  • salt and pepper to taste

  1. gently sautee the Kielbasa in a bit of the olive oil until just starting to brown

  2. then toss in the onion and garlic and cook until translucent

  3. time for the peas to go in, cook for 2 or 3 minutes, and season well

  4. meanwhile, cook the pasta in salted boiling water until just cooked (keep the pasta water)

  5. toss the noodles into the pan with vegetables and sausage

  6. add the olive oil a bit at a time (you may not need all of it) until well coated but not swimming in it

  7. add some of the pasta water a splash at a time to help the noodles get coated

  8. grate in some fresh parm, taste and season again if needed

  9. crack generous amounts of cracked black pepper, lemon juice and serve up
