Bahn Me Pork Burger


Bahn mi is a perfect burger. Sweet, sour, spicy and salty all combined with savoury! Amazing! If you are not familiar with Vietnamese cooking or ingredients, this burger is a great way to get to know them. It's easy and not too overwhelming or scary. Give it a go!

Here's what you'll need

  • 2 pound ground pork
  • 1 small onion (finely chopped)
  • 2 tbsp vegetable oil
  • 1 lemongrass stock
  • 1 tbsp sugar
  • 2 tbsp fish sauce
  • 4 cloves garlic (finely minced)
  • ½ cup mayo
  • 1 bunch cilantro (chopped)
  • 1 bunch basil (chopped)
  • 1 bunch mint (chopped)
  • 2 limes
  • 1 handful red chillies (or as much or little as you like)
  • 4 buns
  • 2 medium carrots (grated)
  • ½ cup white vinegar
  • ½ cup white sugar
  • salt and pepper
  1. start off with your carrots, I used some cut carrots in my local grocery shop, but you can just grate it if you need to

  2. in a pot, heat the vinegar and sugar over low heat until completely dissolved and heated up but not boiling

  3. toss the carrots into a bowl and pour the liquid over, stirring in 1 tbsp salt

  5. set aside to cool completey and keep it in the fridge if you're going to use it right away (it'll keep for a month)

  7. now, make the sauce with the mayo, fresh herbs, juice and zest of one of the limes and chillies if you're using them

  9. and now mix the meat and the next six ingredients along with the zest and juice of the other lime

  11. season well with salt and pepper on both sides and fry or grill for 3 or 4 minutes on each side or until cooked through

  12. smear the inside of the buns with butter and toss under the grill until toasty and warm

  13. cut up some cucumber as thin as you can and drain off some of the carrots

  15. then toss it all onto the bun
