Guacamole is as simple as it gets. Creamy and spicy with the nice sharpness of red onions. For this version, I tossed in some blue cheese and it works so well. Guacamole loves crunch, so I breaded a hotdog in corn flakes and deep fried it! I know crazy right, but our oven broke recently and we only had a deep fryer and toaster to cook with, so we did what we had to do...such hardship!

Here's what you'll need

  • 2 hotdogs
  • ¼ cup corn flakes
  • 1 egg (whisked with a splash of water)
  • 1 tbsp flour
  • 1 avocado
  • 1 small red onion (fine dice)
  • 2 tbsp blue cheese (more or less as you like)
  • 1 clove garlic (mashed)
  • 1 lime (juice and zest)
  • 1 tsp cumin
  • small handful of chopped cilantro
  • salt and pepper to taste

  1. bash the corn flakes in a pestle and mortar until fairly fine

  3. set up a dredging station, then run the dogs through the flour, then the egg, then the corn flakes

  5. set them in the fridge to set up for 10 minutes or so

  7. meanwhile, mash the avocado with a fork with the rest of the ingredients, taste and season well if needed

  9. now you're ready to fry up the dogs, so toss them into a preheated deep fryer until golden and crisp

  10. in the meantime, toast up your buns

  11. drain off the hot dog well and place in the bun and top with guac...garnish with chillies if you like
