CHORIZO CHILLI QUESADILLA

I adore chorizo!! The flavours are so perfect and vibrant and present, that it is actually addictive and craveable. This chilli is a good marriage of Spain and Mexico...spicy and full of flavour with a dollop of sour cream.

Here's what you'll need

  • 1 pound chorizo (cubed)
  • ½ pound ground beef
  • 1 green pepper (diced)
  • 1 red pepper (diced)
  • 1 medium onion (diced)
  • ¼ cup corn
  • 1 whole head of garlic (minced)
  • 1 lime
  • 3 jalapenos (diced)
  • 1 tbsp whole cumin
  • 1 tbsp whole mustard
  • 1 tbsp whole coriander
  • 1 tbsp whole fennel
  • 1 tbsp paprika
  • 1 bunch chopped cilantro
  • ¼ cup diced canned tomatoes
  • ¾ cup grated cheddar
  • 1 tbsp olive oil
  • 4 tortillas
  • salt and pepper to taste

  1. toast the whole spices and bash in a pestle and mortar until completely broken down

  3. sautee onions, peppers, garlic in pan until translucent and fragant

  4. toss in the chorizo and cook until cooked really well

  6. add the beef, corn and tomatoes and simmer until most of the liquid is gone

  7. meanwhile, brush the tortillas with a bit of olive oil and lime juice

  8. spoon the chilli mix onto half the tortillas, grate on some cheese and fold over

  9. grate more cheese on top and sprinkle on cilantro

  10. bake in a preheated °350 oven for about 10 minutes, or until crisp and cheese has melted
